Not that pungent smell of fish that\u2019s been sitting too long, but the salty, briny freshness you remember from childhood days by the sea. It\u2019s still early \u2014 just before the midday sun hits the stalls. Styrofoam boxes creak, knives flash, voices call out in local dialects. Here at the <strong data-start=\"577\" data-end=\"593\">Costa Blanca<\/strong>, fish still comes straight from the sea. And if you know where to look, you\u2019ll find gold with scales.     <\/p>\n<h4 class=\"\" data-start=\"689\" data-end=\"733\">From D\u00e9nia to Santa Pola: where to buy<\/h4>\n<p class=\"\" data-start=\"735\" data-end=\"852\">The Costa Blanca still has several fish markets where fresh catch is brought in daily. Two that stand out: <\/p>\n<p class=\"\" data-start=\"854\" data-end=\"1105\"><strong data-start=\"854\" data-end=\"867\">\ud83e\udded D\u00e9nia:<\/strong> On the edge of the old town, just behind the harbour, you\u2019ll find the <em data-start=\"934\" data-end=\"941\">lonja<\/em> where fishermen arrive each morning (except Sundays) with everything from red prawns to squid. Around 11:30, the auction clock starts \u2014 you can bid or simply buy. <\/p>\n<p class=\"\" data-start=\"1107\" data-end=\"1353\"><strong data-start=\"1107\" data-end=\"1125\">\ud83e\udded Santa Pola:<\/strong> Things are done on a larger scale here, but with just as much charm. The market sits right on the quay, and the atmosphere is grittier. Think: fishermen\u2019s boots, pallets of ice, and Spanish grandmothers who know exactly which dorade is worth buying today.  <\/p>\n<h4 class=\"\" data-start=\"1360\" data-end=\"1407\">What\u2019s fresh? (And what only looks like it) <\/h4>\n<p class=\"\" data-start=\"1409\" data-end=\"1471\">You don\u2019t spot fresh fish by the brochure \u2014 you recognise it with your senses.<\/p>\n<ul>\n<li data-start=\"1473\" data-end=\"1739\"><strong data-start=\"1476\" data-end=\"1498\">Look at the eyes: <\/strong>they should be clear, not cloudy.<\/li>\n<li data-start=\"1473\" data-end=\"1739\"><strong data-start=\"1545\" data-end=\"1566\">Feel the skin:<\/strong> it should be firm and smooth, with no soft spots.<\/li>\n<li data-start=\"1473\" data-end=\"1739\"><strong data-start=\"1609\" data-end=\"1618\">Smell it:<\/strong> fresh and briny. No sourness or that telltale \u201cold fridge\u201d scent. <\/li>\n<li data-start=\"1473\" data-end=\"1739\"><strong data-start=\"1673\" data-end=\"1695\">Check the gills:<\/strong> they should be red to pink, not brown.<\/li>\n<\/ul>\n<p class=\"\" data-start=\"1741\" data-end=\"1894\">And don\u2019t be afraid to ask. Sellers are often proud of their catch, and if something was landed yesterday, they\u2019ll usually tell you straight. Especially at smaller markets or stalls.  <\/p>\n<h4 class=\"\" data-start=\"1901\" data-end=\"1929\">What should you be looking to buy?<\/h4>\n<p class=\"\" data-start=\"1931\" data-end=\"2002\">Here are a few types of fish that do particularly well here \u2014 in terms of flavour and availability:<\/p>\n<ul>\n<li data-start=\"2006\" data-end=\"2110\"><strong data-start=\"2006\" data-end=\"2026\">Dorade (dorada):<\/strong> versatile and mild. Perfect on the grill or roasted in the oven with a bit of fennel and lemon. <\/li>\n<li data-start=\"2006\" data-end=\"2110\"><strong data-start=\"2113\" data-end=\"2135\">Sea bass (lubina):<\/strong> firm, delicate, and a favourite among chefs.<\/li>\n<li data-start=\"2177\" data-end=\"2310\"><strong data-start=\"2177\" data-end=\"2208\">Red prawns (gamba roja):<\/strong> delicate and pricey, but if you know how to cook them right (a quick sear, no fuss), they\u2019re pure magic.<\/li>\n<li data-start=\"2313\" data-end=\"2430\"><strong data-start=\"2313\" data-end=\"2344\">Squid (calamar or sepia):<\/strong> great on the plancha or in rice dishes. Needs a bit of cleaning, but it\u2019s well worth the effort. <\/li>\n<li data-start=\"2433\" data-end=\"2502\"><strong data-start=\"2433\" data-end=\"2455\">Mackerel (caballa):<\/strong> oily, full of flavour, and often overlooked.<\/li>\n<\/ul>\n<h4 class=\"\" data-start=\"2509\" data-end=\"2534\">And then\u2026 into the kitchen<\/h4>\n<p class=\"\" data-start=\"2536\" data-end=\"2733\">Fresh fish from the Costa Blanca doesn\u2019t need much. Good olive oil. Sea salt. Maybe a wedge of lemon or a pinch of piment\u00f3n. That\u2019s really all it takes \u2014 especially if you picked it up that very same morning.     <\/p>\n<p class=\"\" data-start=\"2735\" data-end=\"2934\">My favourite? A whole dorade from D\u00e9nia, rubbed with thyme and garlic, grilled over the barbecue. No sauce, no fuss. Just fire, fish, and silence.
