A friend from Alicante mentioned it almost in a whisper, as if it were a secret reserved for the initiated. \u201cA wine even kings used to drink,\u201d he added. It sounded like a myth \u2014 until I discovered that Fondill\u00f3n truly exists, and is in fact one of the most extraordinary wines in Spain.    <\/p>\n<p>In the lead-up to this Wine Month, <a href=\"https:\/\/thesoundofthecosta.com\/en\/bonamb-sommelier-enrique-garcia-albelda-a-life-devoted-to-wine-and-emotion\/\" target=\"_blank\" rel=\"noopener\">Enrique Garc\u00eda Albelda<\/a>, sommelier at BonAmb, tipped us off that there\u2019s even a film dedicated to Fondill\u00f3n Alicante.<\/p>\n<h4>A wine with centuries of history<\/h4>\n<p><em>Fondill\u00f3n<\/em> is not a wine you\u2019ll casually find on the shelves. It\u2019s made from the Monastrell grape, native to this stretch of the Mediterranean. The grapes are left hanging on the vine extra long, until they become overripe and develop concentrated sugars. It doesn\u2019t work every year \u2014 and that makes production rare.   <\/p>\n<p>What follows is a process of endless patience. The wine ages for at least ten years in enormous, centuries-old oak barrels \u2014 often the very same casks that have stood for generations in the bodegas of Alicante. In silence, in the dark, without haste. The result is a wine that, through the centuries, became famous among royal courts and writers, and placed Alicante firmly on the world map.   <\/p>\n<h4>The film: time as a luxury<\/h4>\n<p>It\u2019s precisely that patience and history that take centre stage in the short film Fondill\u00f3n, El tiempo es un lujo \u2014 Time is a Luxury. It\u2019s culture, heritage, and a story passed down through generations of families. Fondill\u00f3n may well be the finest example of that: rare, precious, but above all a symbol of patience and tradition.  <\/p>\n<p>And as I write this, I know that later this month there will also be space in Gusto to focus on wine and gastronomy.
